I also ran Software Update and ended up with Mac OS X version 10.2.1. It wasn't long (probably 20 minutes after running Software Update) before the pull of the penguin took hold and it was on with the Gentoo install.

Creating the USB drive on a Mac running OS X is as simple as restoring an image with Disk Utility. The Leopard disc image used in this tutorial can be found here.
